Institutional cooking can be very predictable. The same meals can be served at the same time on the same day of the week. The food may be very good. The anticipation can be enjoyable: you know what to expect. The opportunity to make new use of new ingredients is never there. The thinking habits of the last millennium were concerned with the repetition of success. This repeated success was better than failure, uncertainty or the wastefulness of trial and error. But the new opportunities brought about by new technology, new values and new lifestyles cannot be utilised by mere repetition - no matter how successful.

Sound familiar? Repeat what works... repeat what is successful... repeat instead of trying to create new ideas... new designs... something new and inherently different from what is there just now.

I am, and always have been, driven to the new. The different. The thing I haven't heard before.
