I think expertise adds real value and sells product... I want an authentic experience when I consume... be it product brand values... or ambience of surroundings... or knowledge of product.
Knowing the history of the coffee I was after was a really powerful value-add for me.
Coffeehouses should be about service but also experience... adding value through teaching from an expert as well as the making, receiving and consuming a fab coffee.
